How to prepare Biryani masala?


Cumin Seeds: 1 tablespoon

2-3 Bay Leaves

Cloves: 6 to 7

Green Cardamom: 4-5

Black Cardamom: 1-2

1 inch long cinnamon stalk

Fennel Seeds: 1 teaspoon

Star Anise: 1-2

Mace: 1-2 filaments

1 tiny slice of nutmeg

1 teaspoon of black pepper

1 teaspoon of red chilli powder

Powdered turmeric: 1 teaspoon

2 tablespoons of ground coriander


All whole spices (except nutmeg) should be faintly toasted and aromatic in a pan. 

By using a processor or mortar and pestle, reduce the roasted seasonings to a fine powder.
